Sorry if I post questions that have been posted for thousands of times, but here goes.
"I have stayed out of it until now" but how do I enable ordinary users to access the ntfs partition and write on the fat partition?

Simply edit fstab and try changing it to this, it works for me.

ntfs        ro,users,umask=000        0   0
vfat        rw,users,umask=000        0   0
