For whom want to strip down a kernel as much as possible but not forget anything useful, AFAIK the easiest path is to first run begin with a -generic kernel and .config, then "make localmodconfig".

Before you issue this command, load the modules for any devices you'd need (just plug it in if they are removable, or modprobe it) otherwise they won't be built.
