This is my last guess:

Search your installation (I gave you the command) for an executable named "qmake". It may be at:

/home/fabian/Qt/5.11.1/gcc_64/bin/qmake
Once you have the path to that executable, add it to the front of your PATH:

export PATH=/home/fabian/Qt/5.11.1/gcc_64/bin:$PATH
Then try the build again.

Dolphin just uses CMake's standard package-finding:

And CMake locates Qt by the "qmake" executable found in the PATH.

So that may work.

Wow, I wasn't notified about this post, that's why I have pretty much given up and deleted all my different Qt installations, Dolphin beta and so on. In the meantime I had set it up on my Windows PC and in an Ubuntu VM, both worked, but not Debian.
But your last post fixed it! That one command made all my problems go away and the rest of the installation ran through without any issue!
Thank you very much, now I can play SMG2 with actually good performance (there are slight stutters on Windows, because the PC isn't as good, and I don't even get 60fps on Ubuntu, because it's a VM) and two players!
Now I'll have to tell people in five or six different places that it worked, because I asked around so much.
