For the original PlayStation? I'm not sure 'open world' was all that common in the 1990s - there are certainly some platformers and action/adventure titles that have larger levels, but if you're expecting something like No Man's Sky or Skyrim that's going to be a stretch afaik

Some to consider:
- Legacy of Kain: Soul Reaver
- Ape Escape
- Grand Theft Auto 2
- Pac World
- Spyro: Enter the Dragon
- Driver
- Metal Gear Solid

A lot of the more role-playing/story-driven games from this time are more conventional RPGs like Final Fantasy, Star Ocean, Suikoden, etc

Some/all of these are also available for Windows/PC (and may run in Wine), and will offer likely higher resolutions and image quality settings as opposed to the Playstation release (Spyro, for example, has also been remastered, and the remaster does run in Wine - it has relatively high system requirements).

A lot of the more 'iconic' early open-world titles from this era that I can think of will be PC releases or had to wait until PlayStation 2 and Xbox came out, for example The Elder Scrolls series (Daggerfall and Morrowind both come to mind), the '3D universe' Grand Theft Auto games (which are all PlayStation 2 releases), FarCry, the Driver sequels, etc, and then much more on the next subsequent generation (Xbox 360/PlayStation 3).
