Where can I view the DNS activities on a client machine (Ubuntu or Centos)?

On the client, unless you install something like bind locally and use that as a forwarding resolver the requests won't be logged. You could always tcpdump on the client and look for tcp/udp traffic sent out to port 53

Or you can try searching the web for "web proxy linux server"
Of course, as TenTenths suggested it is best done on a DNS resolver.

an interesting way could be to install pihole. It has a very nice GUI and very easy to use. You can install it directly onto your client (or for example on a raspberry pi).
