You need to edit the menu.lst file (it might be in /boot, but could be different on your system).

To change the default OS, look for the line that says "default x", where x is a number. Change it to whatever entry you want to be the default. The first entry is 0, second entry 1, etc.

To change the time to boot automatically, look for the line that says "timeout x". Again x is a number, the number of seconds before it boots the default. Change it to whatever you want.

You'll need to edit the file as root.
