Google is a good place to start. And a local college/university may offer a class that would be worth taking...

C programming under linux

Books are still the best way to learn.
Beginning Linux Programming
Wrox Press by Matthew & Stones
ISBN 1-874416-68-0
Except for the chapter on shell programming,
its all in C.
I'm assuming you know some C already.
If not, check out your local library for
a generic C learning book, like
SAMS Teach Yourself C in 24 Hours
ISBN 0-672-31861-x

It might be better to go for the two book set from SAMS, Teach yourself C in 24 hours and Linux Programming.

sold as the Linux Programming Starter Kit.
