autoconf is giving me a headache

I've been pooring over the autoconf documentation, and I can't figure out several things still. How do you define a symbol? I would like to pass an option to my configure script that allows me to specify which program should be compiled, such as, ./configure --target=libfileinfo or ./configure --target=test. This way people can choose how they want something compiled. An example on how I would do this would be much appreciated. Thanks.
