gnu tools and mac os x
Could I break anything in Mac OS X Tiger by compiling the full set of GNU tools? (not sure yet where to get these, but that should be the easy part...)

I wouldn't think so... though I'd be sure not to overwrite the existing tools from BSD. Fink and DarwinPorts will also both provide you with a package management system that you can install many tools through.
GCC and the other development tools are availible free from Apple as a part of the free XCode development system.

Thanks for your replies on this thread and the other one. My aim is to have all the usual switches for common commands like ls, grep, du, find etc. GNU just feels so much more versatile and functional than the BSD equivalents.
So I guess it comes down to exporting the PATH variable to point to the GNU paths when I open terminals.

Ya, what I do on my Mac is install the tools I like to use in /opt/local and put /opt/local as a higher precedence my users PATH.
