I am not familiar with the linux filesystem, but i want to delete some of the programs on the menu in place of the start menu.

Are you using KDE or GNOME? If you are using KDE, run "kmenuedit". If you are using GNOME install the Alacarte (SMEG) Menu Editor.

in the second case 'rpm -e <appname>' is what you're looking for

apt-get remove programname --purge

or using synaptic to remove the program would work

but it sounds like the poster wants to remove items from the KDE menu
