If you are running KDE, click on Start/System/Configuration/Configure your desktop, this will launch the KDE Control Center (you can also launch it from a terminal window by typing kcontrol). Under the category LookNFeel you can adjust the Fonts used by KDE apps on your system. To adjust the fonts used by Gnome apps or if you are running in Gnome, type gnome-control-center from a terminal window. I donīt run Gnome but Iīm sure there is a Start menu shortcut for it somewhere. You can still run the gnome-control-center from within KDE to adjust the fonts used by Gnome apps in KDE. There is a link to adjust Fonts on the initial page displayed in the Gnome control center.
in addtition to BIACS instructions, a lot of apps (especially browsers) have their own separate font controls. "prefferences"->for instance, in Mozilla, you can go to "edit"->"preferences"->"appearance"->"fonts" & change things there. i'm pretty sure GAIM has it's own font settings in the preferences section, too. (i use xchat for the most part, so i'm not too up on GAIM.)
