Procmail is a very flexible autonomous mail processor. It handles mail that has been received by Postfix using .procmailrc 'recipes' that determine what to do based on various aspects of the mail. You can configure a unique .procmailrc for each user. My .procmailrc whitelists some mailing lists and addresses, pipes everything else through Spamassassin, and delivers the results to my maildir directory.

Fetchmail does just that - fetches mail from specified remote POP3 servers and delivers it to Postfix.
