After you re-sized your partition in the extended partition, move all the partitions to the back of the drive, then you can re-size the extended partition to add the free space to yout root partition (sda1).
I started moving all the data between partitions (from home back to Linux Swap) so that it's now next to the partition I need to resize. The only problem is it won't allow me to resize the root partition. The only reason I can think of is that the unallocated data even though next to the root partition is on an extended partition. Is there any way to move it out of that onto the root partition?
Did you shrink the extended partition to exclude this space? Until you do that, the space is NOT "unallocated" space - it is allocated to the extended partition. (The extended partition is probably referred to as sda2.)
