Yes, Linux will definitely read your Windows files.
The best way to install is (assuming you have one new hard drive, and no other hard drives):
first install Windows, using Windows CD to make a partition for windows, and another partition.
Second install Linux, telling it to use the other partition (it will probably want to make more partitions from the original, depending on which distribution you will be using). If you use one of the main Linux distributions it will install a boot loader which will load Linux by default, but give you the option to boot Windows when needed.
