Virtualization as a quick backup restore

I currently use Ubuntu Server running Karmic and Lucid for my servers. As a backup, I have the entire root directory copied and saved to a file server on a regular basis so in case a server were to die, I would be able to restore it on another physical server later on. I was wondering if there was a way to take that root directory backup and create a VM by running VirtualBox as a quicker way to bring the server back up? I have been looking onto some P2V software but I couldn't find any that would take a linux root directory.

I'd use the P2V software (vmcreator I think) from VMware. It takes the whole drive.
