A virtualized server should be just as stable and reliable as a physical one. Not sure what you want to test about it...

sanity tests?

acid_kewpie.if prior to virtuailzation if I had a physical server that had a couple of applicaations say a DB,a server. How can I ensure that they are working fine and virtualizations has not stopped/affected their functioning.

the same way you'd test any other migration. In my book that would be load and user acceptance testing.
