New to this - recommendation on virtual server host software?

Hi all. I'm finally getting my wish at work and managment is providing 2 new servers - both of which are the same build and have dual Xeon E5506 quad core processors in them.

My question is: What would be the best virtualization host in a production atmosphere? Both machines will be running debian guests (multiple servers of course).

I've tried Xen and KVM. Both seem to work just fine. Not tried Open VZ or Vmware.

Any suggestions? Tips? Tricks? Things to consider?

Thanks so much for any input.

Hi

depending of which OS will the host be running ? (rhel ?)
KVM is now RHEL 6 standard included, probably VMWare isn't going to have any trouble running hosts.

I was going to run the hosts on Debian. Not because I have to, rather it is more familiar.
