Your backup scheme

I'm curious. For those of you admining networks of multi-service, multi-user environments, whats your general practice and theory? How do you make your backups, and how do you asure yourself that you can recover from complete disaster.

I use tar and other programs usually included with the base OS install (Linux and BSD). This makes it easy to recover. no special hardware, no speical software.

Do you make a giany single file of everything or do you cut it up into peices (home-dirs.tgz, etc.tgz, etc.)

I'd like to hear about your scheme as I'd like to se how I could improve my own.

Thanks!
