what do YOU use to visualise scientific data?
 
I'm teaching physics. My pupils (15 to 18 years old) gather data from their experiments and the datafiles generated are plain text. Then we search for trendlines and their equations. Sometimes we do some integration ...

"Graph" (you 'll find it at padowan.dk/graph) does a good job (with WINE) and is not too difficult to manipulate.

Do you know of any other decent DATA SOFTWARE my pupils might be able to use (i.e. with GUI, NOT CONSOLE STUFF)?

Is Grace at all useful to you? I've used this to make plots from data in plain text form. I don't know all the features it has, but they're listed on the website above.

Grace looks suitable for the job. Thank you.

In the mean time I also found LabPlot.

Together with Graph that makes three to choose from. I'm making progress.
