Can you start it right after installing it? The command type virt-manager will tell you where it is located.

Or perhaps its location is not the problem. Which error message do you get when it doesn't start?

I've seen this sort of behavior working with a write protected eMMC drive. I was working from a Ubuntu Live session and Ubuntu never complained, but after reboot, came to find nothing that was supposedly done in the last session stuck. Had to unlock the eMMC drive before I was able to make any changes that would survive a reboot.

As I said, the command type virt-manager will tell you where it is located.

Are you running mint from an installed OS or from the live USB?

If the live version then it will always allow you to install it but goes back to the vanilla software when you reboot. If installed then the suggestions above should help.
