So this is slightly scary...from what I understand it's now impossible to remove Evolution, or any other default items from the gnome taskbar as of 10.04?!?!?!?!? Please tell me this isn't happening....

Uhhhh....it isn't. You can remove/add whatever you want. Don't know where you heard this, but you might want to do a little research/reading first.

If youre worried about being able to customize your linux try another distro, debian would feel pretty familar coming from Ubuntu, and theres always slackware and arch too

Well I'm looking at it right now, and all of the defaults have the "Remove from panel" greyed out....And internet searches reveal nothing....Any advice on how to enable the option then?

Post it on the ubuntu forums maybe. They may know if it is a bug, feature, bad install, or permissions.

I know this may be silly to ask, but I have seen it before. Does the "lock to panel" box have a tick mark in it? You cannot move nor remove it if it is locked.
