Introduction to Linux - A Hands on Guide
This guide was created as an overview of the Linux Operating System, geared toward new users as an exploration tour and getting started guide, with exercises at the end of each chapter.
For more advanced trainees it can be a desktop reference, and a collection of the base knowledge needed to proceed with system and network administration. This book contains many real life examples derived from the author's experience as a Linux system and network administrator, trainer and consultant. They hope these examples will help you to get a better understanding of the Linux system and that you feel encouraged to try out things on your own.

Is there a PDF program that will do this, one program, pretty much out of the box?
Converting the PDF to something like a text file, adding text, and converting back would be OK if it actually worked. I tried eprint with Windows, either I couldn't figure it out, or it really is so wanky as to be unusable for what I am wanting to do.
All I am wanting to do is to down load these job applications in PDF, and type into them before I print them out.
There are several *nix apps: try converting to PS (postcript) format. Add whatever you need to add, then revert to pdf via ps2pdf.
If you are using a Linux box, first run 'updatedb', then 'locate ps2' to see what apps turns up.
tiagomadeira, I have not yet figured out how to work with LaTex and texi2pdf
From what I have read so far I think I will have pretty much the same situation with LaTex and texi2pdf?
