¿Do I have to create the certificates with this package? ¿Can't I use OpenSSH? ¿Which are the differences?

Not sure how to answer part of this; the tutorials/instructions are clearly telling you what to do....and you're questioning them why?? Yes, you have to generate an RSA key.
The differences between RSA and SSH/SSL are MANY, and are covered on many security websites (please see them for further information), but it boils down to the difference between a trusted certificate and a key.

You asked if you could do it with openSSH, and what the difference were between RSA and SSH also.
You can use whatever you'd like to generate an RSA certificate...that is the easiest one to use, and the most widely documented. Feel free to use whatever you'd like to generate your RSA certificate, as Linux has many options, as well as the pay-for online certificate sources.
