I do not quite understand your question, but gateway settings and proxy settings are something quite different.
Squid is running as a proxy server in your network, and to use it, you have to enter the proxy ip and port adress in your internet explorer.
To use a gateway you have to define routes on the workstation and configure e.g. nat on your server.

Does this help you ?

As far as my knowledge reaches, that is not possible.

What would be your consideration not to use the proxy setting ?

You can give the proxy adress to your clients automated via dhcp or some other protocol (www.squid-cache.org) that i have no experience with.
