Configure your mail client - sendmail, postfix, exim, qmail or whatever.
If You want to close it, kill all email programs, change your firewall rules and forget about getting email.

For email in linux you need
an MTA Mail Transport Agent postfix or some smtp client
an MDA Mail Delivery Agent - procmail, or some monolithic mailers (kmail, t'bird)
an MUA Mail User Agent - a mail reader
a POP or IMAP client to get incoming mail. Monolithic mailers have their own too.

You didn't fill out your profile so we don't know what distro you're running. Its different depending on your distro and if its KDE, Gnome, whatever.

On my Redhat Gnome desktop its located here, but its going to be different for you if you are not running Gnome.

Applications --> System Settings --> Server Settings --> Services
