setting up an email server


so now that i've got my bind servers working and got apache going with virtualhosts I'm ready to set up an email server. I've been reading around and i think im gonna install qmail with pop3.
unless someone can talk me out of it.
I want to get rid of all the sendmail and postfix chaos. can i just delete all the relevent files and any references in startup scripts without breaking anything?

The "Life With qmail" doc that is linked from your nearest qmail.org mirror deals with this topic explicitly, including detialed descriptions of how to make sure sendmail isn't running (so that you may test qmail), how to ensure sendmail won't startup on your next reboot, and how to setup daemontools to manage your qmail startup.

well i've flip flopped and now im trying to get postfix set up
I've got it running but all the mail just gets stuck in deferred.
postfix can't seem to read the aliases. i ran newaliases and that didn't seem to help either. i must have the config wrong somewhere.
