Remonte data files

Currenlty I have two disks on my Linux test machine. One is reserved for the system and the other for data. I need to keep the data on a separate disk for security reasons (so I can pull it out of the machine and take it with me when I go home for the night) and so cannot copy it to the user file set up by Linux.

The problem is that when I open a file, it's read only. Also, I cannot save to that disk.

Is there any way for my to get Linux to treat the data on that separate disk the same way it treats the data on the disk it is installed on?
