Does anyone know where the Redhat kernel-source rpm's are kept?

Do you mean on the cd or where they are installed on the hard drive? They install the kernel source in the /usr/local directory.

Where can I download the latest redhat linux-source files.

there aren't "latest" redhat sources, the very newest official kernels are at kernel.org, but redhat only release a kernel per distro (explduing occasional upgrades) so you should use the kernel-source rpm from your distro cd's.
