Question on Apache Log Files

I'm wondering if there is a way to pass an environment variable in the ApacheConfig files? What I want to do is use an envvar that I created called day that formats the date YYYYMMDD and use it in the log file name for the virtual hosts that are running.

Something kinda like this:
CustomLog /pathtologdirectory/access$day.log combined

I have tried it as shown above and apache just creates the log file with the $day in the filename instead of taking the value for the variable...

This is so that the log file apache uses is updated each day to include the current date so that I can keep up with access dates a littel easier than scrolling through line after line of logs.

I'm trying to avoid having the log file read twice by a stats program when they are rotated.

Any help would be appreciated...
