postfix X-extra-header-information:

hi there,

i'm trying to get postfix to add a bit of information in the header of each email that comes out of my mail server.

Can someone tell me how to make it so each email adds X-extra-header-information: to every email?

You can "man 5 access" and see the PREPEND action to see if it suits your situation. This works for mail submitted via SMTP, as opposed to mail submitted using the sendmail command.
