Just a follow up to say this seems to have fixed the problem. No idea how it got changed or classes had gotten set up. Before this issue started I didn't even know what CUPS was! Much less ever changed anything. I am very greateful of the help finding this, I was almost ready to just go back to Windows.

Now, if someone would add a Custom Paper size option to a HP DL 800 plotter driver I wouldn't have to use Windows for anything I don't think.
