MSExchange
I am currently using MS Exchange with MS Outlook clients. I want to use linux as my new e-mail server and keep the MS Outlook clients. What linux program would I use as my new e-mail server and how would I point my old/new e-mail to that new linux e-mail program but still use the existing MS outlook clients.

Check out Zimbra or Scalix
Postfix and Squirrelmail are not comparable to Exchange as they only do email.

Do I have to do any conversion of data from exchange to any of the linux mail services? Example moving data from Exchange to Lotus Domino.

There is a "shuttle" program you can buy for $150 or so, or you could do an end-around type upgrade (I've done this); push data up into the new server via IMAP.
