Modifying text properties in Gimp
 
In Gimp, I created a text object and then did several other things. As I was creating it I had access to a toolbox that let me change the font, color, etc. Is there a way to gain access to that very same toolbox later on to modify those attributes of the text? (Modifying the text itself seems easier.)

Simply activate the text tool, then double click on the text object you created before. You should then be able to modify it however you want and the changes will take effect as soon as you close the edit box.

Modify attributes; text is easier
 
I tried what you suggested and got a text box, so I could modify the text that way. But it didn't help with the attributes (font, size, alignment, etc.). I must be missing something.

It always works for me. I've often changed the font type, size, and color this way. As I said though, the changes don't take effect until after you close the text box.

Another way works
 
I got the attributes (after double-clicking the old text in text mode) by going to Dialogs/Tool Options.
