Menu Editor and Controlling Window Behaviour in Gnome

Hello everybody,
My distro is Debian Lenny. I have used KDE for the past five years. Now, I am trying Gnome, because I experience font corruption in OpenOffice in KDE environment. As the one very much used to KDE, I want your help on two things.
First, how can I edit menu items in Start menu?. In KDE, right-clicking the K menu opens Menu Editor dialog, which was quite easier.
Second, can I control window behaviour. For example, if I want Iceweasel to always open in a maximised window, what should I do?
Thanks in advance.
Allwyn

i have not used debain is a VERY long time but...

have you looked at " Gnome Configuration Editor "
Configuration Editor 2.30.0

" Start menu?" ????????? what
the closest thing to the MS "start " the the "computer" menu in the lower tool bar that some distros use ( i removed that from SUSE - did not like it )

or the default "menu" -- Applications Places System--- in the top tool bar
r-click on any of them and select " edit menu "
