Memsearching and memediting, and packeting.

Well, for those that don't know, memory searching and editing is...er...the action of searching for values in your memory, figuring out which offset you're interested in, and editing it to suit your needs. Probably freezing its values, etcetera. Windows tools : TSearch, GameHack 2.0
Meanwhile, packeting is usually the action of sniffing, capturing, analyzing, and/or injecting packets. Windows tools : Ethereal, WPEPro.

How should one go about theses activities in unix? Short of writing my own script and programs?
Do I just write to some /dev/ or something? Or $cat or $od the network card device....
Thanks bunches
