Manually removing an endpoint from a kubernetes service


We have monolithic application that I want to manually remove from a service endpoint in Kubernetes. Basically, the rolling update nor the deployment update part will not be able to serve client request due to incompatibility with version code. Is it possible to take out one endpoint at a time manually from a service? And is it possible without bringing down the entire service and allowing clients to be routed to a good endpoint.
