There's plenty of log file anaylsis tools for Squid, check out
http://www.squid-cache.org/Scripts/ for an overview. Try some out until you find one that provides all the info you need.
As for connection settings, you should be able to set the proxy ip address + port number in the settings for your browser, which will vary depending on browser. What clients are you running - if it's a windows network, group policy can be used to deliver these two settings to all machines, regardless of the browser in use.
