Mailserver resetup

I have a RH 9 distro, from which i installed my original IMAP server. I would like to reconfigure it to put my mail in $HOMEDIR/mail instead of $HOMEDIR.

I would like to know:

1. How to remove the UW-Imapd already in place and it's associated packages
2. How to build from source code so that my mail get's put into $HOMEDIR/mail
3. Will all new users get their mail in $HOMEDIR/mail automatically after the reinstall?
4. What else do I have to change for everything to recognize the new path of $HOMEDIR/mail

Thank you.
