Looking for best setup for Workstation/NAS/Torrent/MySQL

I currently have an older PC with windows 10 as my 2nd computer at my desk. Currently I'm using it for a file server for all my ripped music and movies, MySQL for my Kodi RPI devices, and running BitTorrent for the few things I get from the internet. I'm looking at upgrading the HDD's and redoing it just not sure what direction to go as most NAS software I see looks like an OS/Image instead of an add on package. What I'd like it to do.

Hardware
Intel I3-4170 Dual core 3.7
8GB RAM
1 512GB SSD
2 6TB SATA drives

Goals
Desktop UI to use a browser, tinker and do Dev stuff on occasionally
NAS - I want to RAID1 the 2 6TB drives with encryption
BitTorrent
MySQL - possibly run from a container

Yes, if you look at distro's made to replicate a NAS then it will be a complete OS/image. However almost every mainstream distro can do all what the dedicated NAS distro's can. The NAS distro's may make it easier for the user and present a look that replicated the NAS experience.

Many of the file server use may consider any of the advanced file features like ZFS or even LVM for managing resources.

I'd install a virtual machine software in W10 and try out a few of the choices.
