Looking for a fix or workaround:Ubuntu hangs after customizing the Applications menu.
 
After I customize the Gnome applications menu, when I reboot the Gnome panels don't load and I need to delete my customizations in the .local/share/applications directory to get Ubuntu working again. This has happened twice and it is really annoying.

Is this something I can fix? Should I report this bug somewhere?

Can anyone recommend a GUI shell to replace the default one Ubuntu comes with? Would I be better off switching to Kbuntu?

Why not try it and find out? In a properly configured system, it is a matter of logging out, changing desktop preferences, and logging in again.
