Linux Chat Server/Client

Hello folks,
I would like to know what would you guys recommend if I want to install a chat server on my network, I see a bunch of client apps such as gaim with nice ratings, but I'm not familiar with any server systems, can you guys recommend me any?

Our network:
I currently have both, windows and linux servers available with windows clients only, so, whatever you recommend, keep in mind that I'll need a windows client compatible for the server.

jabber based server, like jabberd and ejabbered are probably the best way to go. gaim works well with jabber servers for sure.

I'll second the Jabber recommendation. It's stable and flexible. There are also quite a few clients to choose from for various platforms.
