First, please read here. It's always important to include which distribution of Linux you're using and what version.
Yes, it appears that Plex is available for Ubuntu (and it's derivatives) and Fedora. Please see here. It's possible that packages were created for other distributions but you would need to check around Google (or your package manager) and make sure that this was legally done.

Plex Media Server runs perfectly on my LinuxMint box. Been using if for a few years. I access it using (1) the Plex Web Client, (2) two different Rokus (via the Roku Plex Client), (3) a Windows 7 laptop (via Chrome browser), (4) an iPad (via Safari browser), (5) a Linux laptop (via Firefox browser). Zero problems. I have accessed it using a generic DLNA client on the Roku (Plex Media Server includes both a Plex server, and a DLNA server - but you'll want to use the Plex server whenever possible).
There is no need to run Plex Home Theater (although I think it is available for Linux - not sure though). That is just a Plex client, and much better IMHO is the "Plex Web Client" that comes with Plex Media Server. That does not have to be installed on the various client machines. They just open a web browser, point it to the server, and the Plex Web Client runs from the server.
