mplayer is pretty straight forward if you have the necessary tools ( gcc, make, etc..)
if you want the gui you'll need libpng, glib-1.2.x and gtk-1.2.x

go to the mplayer site and download the source tarball and the codecs package ( the essential-xxxx one should get you by fine)

extract both the codec package ( tar -xvfjp essential-xxxx) and the mplayer source ( same tar command)

cd into the mplayer source directory and (without gui)

./configure --with-codecsdir=<path to unzipped codecs directory>
make
make install ( or you can use checkinstall to make a .deb package)

(with gui)

./configure --enable-gui --with-codecsdir=<path to unzipped codecs directory>
make
make install

there is a little setup to do ( it's usable out of the box, but there's some things you'll want to do), look on the mplayer site at the documentation, it's pretty thourough.
