I recently had to do this for a client,.. so I decided to make and maintain a script to do the same, without the hassle. Not really a SBS, more of a central administration server. But there you have it.
Its in alpha stage,. basically downloads the materials at this point. Any other software suggestions?
I was thinking of finishing this up, then making a drop-in central programming team server. Something with.. MantisBT, subversion, git, rundeck, jenkins.. that sort of thing. Sounds like it could be useful.

I recommend avoiding phpMyAdmin. It's the first thing to be exploited in most cases. All of the script kiddie tool kits look for it. Especially since most of that software is normally installed in separate environments as highly available and critical for enterprise operations. You have observium but that's more of a trending software. You should have something like Icinga or OpenNMS for real time alerts. Also, depending on what you use it would be worth checking out PNP4Nagios or Munin as they are both trending programs like observium.
I like the idea of a Nagios/Icinga/Zenoss alerting/monitoring daemon. Im tempted to leave phpmyadmin out, as i don't see a need for it.
Im changing the name too, because this is more of a monitoring and administration server. I found that there is another open source project already covering the mail/calendar/ldap aspect of a sbs @ http://www.zentyal.org/.
