How to switch Mail Transport Agent in FC3?

I believe "sendmail" is the default mail program in FC3.
I've installed postfix, configured, stopped "sendmail" and started "postfix".
So I try sending an email to my hotmail account using PHP (I have a webserver) and I thought it'd work but look at the Mail Log:
Code:
Jun 26 22:43:25 localhost postfix/master[5887]: daemon started -- version 2.1.5
Jun 26 22:43:39 localhost sendmail[5892]: j5QKhXBi005892: Authentication-Warning: localhost.localdomain: nobody set sender to noreply@heiatufte.net using -f
Jun 26 22:43:58 localhost sendmail[5892]: j5QKhXBi005892: from=noreply@heiatufte.net, size=260, class=0, nrcpts=1, msgid=<200506262043.j5QKhXBi005892@localhost.localdomain>, relay=nobody@localhost
Jun 26 22:43:58 localhost sendmail[5892]: j5QKhXBi005892: to=heia_tufte@hotmail.com, ctladdr=noreply@heiatufte.net (99/-1), delay=00:00:25, xdelay=00:00:00, mailer=relay, pri=30260, relay=[127.0.0.1] [127.0.0.1], dsn=4.0.0, stat=Deferred: Connection refused by [127.0.0.1]
Ok so I'm not 100% sure what all this means but I know the mail isn't sent.
I need to
1) Be able to send mails from PHP with whatever Return-path: I want
2) Be able to send every mail through another specified SMTP host
I'm not even sure if postfix is able to do that. If you know of another program which is good, please tip me!
Anyway, just to make it work would be all right. Anyone know why my mails aren't sent?

Hello, since no one replied yet I'll try to help a little, please note I don't know postfix and use redhat enterprise instead of fedora. Pretty sure they work the same however.
First if your postfix logs show activity when the outgoing mail is (attempted) sent then its a good bet you are already configured to send mail with the new transport agent.
In redhat (assuming fedora is the same) you modify the link /etc/alternatives/mta to point to the agent of choice.
