most have a -v option and/or a --version option. give that a try.

ie.

[prompt]$ xine -v
This is xine (X11 gui) - a free video player v0.9.22.
(c) 2000-2003 The xine Team.
[prompt]$

Ok, more paticular, I want to know what version of Samba I'm using, I tried samba -v and samba --version, returned a 'command not found'.

rpm -aq | grep samba

That will tell you what samba packages are installed.
