In my suse 9.1 it would be

rcsshd stop

to stop and

rcsshd start

to start.

You can also do

rcsshd status

just to check.

Depends on what kind of system you have and what kind of scripts it uses. For a lot of systems morso red hat based distros it would be this:

/etc/init.d/sshd stop
/etc/init.d/sshd start
/etc/init.d/sshd restart

Pretty self-explanatory.

Have a look in /etc directory or do an slocate or locate

slocate -U / && slocate sshd

Also have a look at /etc/inetd.conf. Last time I used Debian I think it starts up thoose services using that file. That's one of the first distro's I started out learning on and I left it pretty quick exactly for thoose reasons. There were no tools or handy scripts that I knew of at that time unless you knew alot about Linux.

I was more interested in killing services I did not need instead of starting and stopping them on demand.

/etc/init.d/ssh stop
/etc/init.d/ssh start
/etc/init.d/ssh restart

If you want to stop it from running at boot, then type "dpkg-reconfigure ssh" and select no when asked "Do you want to run sshd server?"
