GTK widget appearance

Can anyone tell me if there is a way to specify a default size for GTK widgets please?

For example, GIMP has a UI prefs section whereby one can change the theme.
Evolution does not seem to have this facility.

My need is to be able to change the feel of Evolution (and others, such as planner) so that it fits better into my KDE environment and also to free up a little more screenspace.

At the moment, the default GTK appearance is somewhat clunky, or as my colleague in code puts it, 'it all looks like a kiddies application'

Any ideas will be most welcome.
