This tutorial use Grub1, Newer Ubuntu use Grub2. But if you want to install a server as of now -DON'T- use 9.10, it's outdated and not a long term support (LTS) version. So it is -NOT- recommended for a server. Ubuntu 10.04 or a real server os (CentOS).
About the raid, Ubuntu never supported it well. It is why the only versions giving the option is server and alternate, same thing for encryption and LVM. Ubuntu is a good cloud distro, but a not a good general server distro.
