Gimpshop is just Gimp with a different layout of menus and the overall look&feel. No other differences.
You could install them both of course but you'd need to install them into different locations, so that the files don't get overwritten, so that would mean something like using a different prefix while configuring the source code for compilation. If you're installing from a binary package, I doubt if it's (easily) possible without repackaging the program.
Anyway, what's the point in having them both as it's actually just the same program but with different interfaces?
